Every Stars Hollow town meeting has the same rhythm. Taylor Doose bangs the gavel, reads an agenda nobody asked for, and proposes a new regulation about something nobody knew needed regulating. Luke rolls his eyes, Lorelai cracks a joke, Kirk asks a strange question, and Taylor ploughs right on. He is the town’s selectman, its grocer and its self-appointed guardian, and he takes all three jobs very seriously.
He is an ESTJ, which means he organizes and controls. Taylor runs Doose’s Market, chairs meetings, plans festivals and keeps track of every rule, permit and petition. He also loves tradition: he wants the town to stay exactly as charming as he imagines it was in the old days, which is why he opens an old-fashioned soda shoppe just across the square from Luke’s diner. Ambitious schemes come with the package, like the soda shoppe, the many festivals and, in the revival, a town musical. The blind spot is how his rules land on people. He is not trying to be mean. He just cannot see why anyone would object to a perfectly reasonable ordinance about lawn ornaments.
On the enneagram he is a 1 with a 2 wing. Ones want to improve the world and do things correctly, and they feel deep resentment when others will not cooperate. Taylor’s endless feud with Luke is a clash between two men who both think they know how things should be done. The 2 wing gives him a need to be appreciated as the town’s helper, which is why he gets so wounded when Jackson runs against him for selectman and wins.
But: some fans read him as a 3, focused on his image as town leader. I can see that. Still, Taylor’s drive is order, not admiration. He would rather be right and unpopular than popular and wrong, and that is very much a One. Taylor does not change much, and that is part of the joke. Seven seasons and a revival later, he is still banging the gavel, still scheming, and still convinced that Stars Hollow would fall apart without him. He might even be a little bit right.

In relationships
Allies on committees, rivals at meetings, and Kirk, his loyal and slightly confused helper: Taylor's relationships are mostly civic. Stars Hollow itself is his great love, and when people show up to his festivals, he feels loved back.
In conflict he files a complaint, schedules a meeting and makes a speech. He needs people who appreciate structure, or at least tolerate it. Emily would respect his committees, Richard would admire his attention to tradition, and Paris would happily take over the agenda.
